So some of you may know about my two week challenge, if not here it is in a nutshell, I have decided not to eat meat for two weeks, starting four days ago. If you would like more details check out my earlier post My Two Week Challenge.
When I started this self imposed challenge I had no idea that I really wouldn't be that hard. I thought that eating vegetarian food in a college cafeteria would be a difficult task, but so far it hasn't been. It really has been quite simple to avoid meat, but am looking forward to eating it again. I have found it quite interesting that even though none you you will actually know if I ate meat, and therefore if I wanted to I could, that I haven't. I am proud of myself that I have so far been able to keep this promise, and hope to keep it for the next week and a half.
I also decided to track all of the food that I was eating to prove, if any questions arose, that I hadn't eaten meat. So this is a list of all the food I have eaten in the past four days.
Day 1 – 10/06/08
Breakfast: Rice Krispie’s (in milk), pineapple, French toast, hash browns
Lunch: Salad, Asian style noodles, apple
Dinner: Pasta with marinara sauce, roll, salad PB&J sandwich
Snack: Pretzels, tapioca pudding with protein powder
Day 2 – 10/07/08
Breakfast: Scrambled eggs, biscuit and gravy, and hash browns
Lunch: Omelet with onions, tomatoes, mushrooms and bell peppers, rice
Dinner: Waffle with chocolate chips and pecans, covered in strawberries compote, and glass of milk
Snack: Bag of Fritos, applesauce, nature valley granola bar
Day 3 – 10/08/08
Breakfast: Chocolate muffin, blueberry muffin, and a bowl of grits
Lunch: Foot long veggie sub from Subway, and a FUZE drink
Diner: Spaghetti with marinara, roll, salad
Snack: Oreos, cinnamon twists, and yogurt
Day 4 – 10/09/08
Breakfast: Scrambled eggs, 2 mini pancakes with syrup, biscuit and gravy, hash browns
Lunch: 2 slices of veggie pizza, salad, an apple, 2 peanut butter cookies
Dinner: Green beans, corn on the cob, noodles, bowl of Captain Crunch, “crepe” with marshmallows and chocolate chips
Snack: Ramen Noodles

Your menu sounds yummy and easy to eat. Maybe for your next challenge you should try vegan.
I don't know if I could do that, no dairy, eggs, honey, or chocolate (I don't think vegans can eat chocolate because it has milk in it, correct me if I'm wrong). I thought about doing that as a challenge, but don't know if my cafeteria has enough variety to keep me going for two weeks. I will think about it though, and who knows, maybe I will try it out.
