I had a hard time deciding my "E" blog. But, hands down - eggs are the most marvelous creation ever. Scrambled cheese eggs are up there with nirvana. Eggs are always a frustrating thing to buy...when I am struggling whether it is better to try and buy the Cage Free or the Organic. My mother-in-law lives in the mountains and she can occasionally pick up some eggs from a local free-ranger on her way here. Seeing the producer and supporting a local is terrific. I'm hoping I will find that that my local CSA at my UU congregation has some eggs that I can start getting. I'm going to start getting some vegetables and items starting tommorow from that source.
Ethics and food are always a hard juggle in an economy like this. Of course, I'd love to be lusting over the aisles at Whole Foods. But, often I am circling the Organic aisle at Krogers for sales and trying to find things at Trader Joes that I like. I was very happy to have grown some vegetables in some container gardening this year. Tomatoes that you can pick right away for salad are also a great joy.
But, let me get back to eggs. There is of course the book Green Eggs and Ham. One can not have a truly full childhood without using some nice healthy food dye(hahah) to make some green eggs. I hear that stuff colors your insides. It's not easy being green...(I digress). Eggs are a protein -they can are the perfect baking companion. They hold all of your lovely breads, cookies, or muffins together in good fashion. They make macaronni and cheese more fluffy. They counter the sticky sweet of pancakes with a zing of salty fullness. Eggs are great portable snacks when boiled. They make great decorations for the Spring and you can hollow them out to make holiday decorations. There are things you can do with crushed egg shells. Oh dear eggs. I hail thee as the food of my heart. (As long as I don't count my cholestorol.)




I don't eat eggs for cultural/religious reasons. But I remember in kindergarten, after we read "Green Eggs and Ham", the teacher used food coloring to turn different foods (including eggs!) green. Ah, the memories...
